Piccalilli Part 1

In the quest to make all of my Christmas presents, I have decided to have a go at making my own piccalilli.  For those of you not familiar with this wonderful creation it is a mustardy pickle that goes beautifully with cheese and biscuits.  Yum yum yum. It needs about 3 months to mature so I am a little late, but I figured I could write a ‘do not eat until 23 January 2011’ note on the jar!

I have chosen a Delia Smith recipe, which happily is available online so I have linked to it here.

In true, iMake style, thought it would be fun to document the making process.

So today I purchased 7 (yes, 7!) 1lb jam jars and wax discs.  I have chopped up masses of cauliflower, runner beans, pickling onions and cucumber and have put them in bowls to soak in bring (just water and sea salt).  I will leave these overnight and then Piccalilli Part 2 will begin in earnest tomorrow afternoon.
